Blackberry Sherry Vinegar
Makes 3 cups
Ingredients:
1 cup frozen blackberries, thawed and crushed
1 cup dry sherry
2 cups white wine vinegar
Mix the vinegar and sherry and heat until almost boiling. Pour into a sterile, air tight container with the berries. Place in the refrigerator for 1 month. Strain through a fine mesh sieve, and pour in a clean, sterilized jar.
