Marinated Goat Cheese
Serves 4 to 6
Ingredients:
1/4 cup chopped chives
1 teaspoon oregano
1 garlic clove, minced
1/3 cup olive oil
1/2 teaspoon coarse black pepper
1 (8-ounce) round of goat cheese
Crackers or toast points
In a small bowl, whisk together the chives, oregano, garlic, olive oil and pepper. Place the goat cheese in an airtight container and pour the mixture over the top. Marinate in the refrigerator one day, or overnight. Serve the cheese at room temperature with crackers.
