Panzanella (Italian Bread Salad)

Makes 8 Servings
Ingredients:

10 (1-inch-thick) stale Italian bread slices, cut into 1-inch cubes and toasted
1 pound fresh mozzarella, cut into 1/2-inch cubes
6 plum tomatoes, chopped
1 small purple onion, thinly sliced
1 green bell pepper, thinly sliced
1/4 cup fresh chopped basil
1/4 cup fresh chopped oregano
Balsamic Vinaigrette
Salt and pepper

In a large bowl, mix the first 7 ingredients together. Add balsamic vinaigrette, salt and pepper to taste.
