Tuscan White Bean Puree

This is an excellent spread for a crudité platter, flatbread, or on sandwiches.

Serves 4 to 6

Ingredients:

2 (15-ounce) cans cannellini beans
3 garlic cloves, minced
Juice Of 1 Lemon
1/3 cup olive oil
1/2 cup grated parmesan cheese
3 leaves fresh oregano
2 teaspoons red pepper flakes
Salt and pepper to taste

Put all ingredients into a food processor and pulse until pureed. Store in an airtight container for up to 2 weeks. Serve warm or at room temperature.
