Zuppa Toscana
Makes 6 servings
Ingredients:
1 pound smoked sausage
3/4 cup chopped onion
6 slices bacon , chopped
2 teaspoons minced garlic
4 cups chicken stock
4 cups water
2 potatoes, cut into 1/4-inch slices
2 cups kale - washed, dried, and shredded
1/3 cup heavy whipping cream
Italian bread
Preheat oven to 300 degrees F.
Place sausage onto a baking sheet and cook for 25 minutes, or until done. Cut links in half lengthwise, then cut at an angle into 1/2-inch slices. Place the onions and bacon in a large saucepan and cook over medium heat until onions are translucent and the bacon is crisp. Add the garlic to the onions and cook an additional 1 minute. Add the chicken stock, water, and potatoes, bring to a boil, lower the heat, and simmer 20 minutes. Add the sausage, kale and cream. Simmer 10 more minutes. Serve warm with crusty Italian bread.
